2019台北米其林指南揭曉 摘星餐廳全公開 | Michelin Guide Taipei 2019 unveiled

2019台北米其林於4月10日在台北文華東方酒店登場,摘星名單出爐,君品酒店頤宮中餐廳維持三星。

TAIPEI (The China Post) — The Michelin Guide Taipei 2019 was officially unveiled on April 10, celebrating Cantonese restaurant Le Palais (頤宮) with three stars for the second consecutive year.

獲得二星的有5家,包括RAW、Tairroir態芮、鮨天本、祥雲龍吟與台北喜來登大飯店請客樓。獲得一星的則共有18家,其中台南担仔麵坐落華西街,從路邊攤小吃起家,走過50年歲月後,現創造出台式海鮮的超卓口味。

Two-star winners include RAW, Taïrroir (態芮), Sushi Amamoto (鮨天本), Shoun RyuGin (祥雲龍吟), and The Guest House (請客樓). The popular also announced 18 one-star restaurants, among which Tainan Tan Tsu Mien Seafood (台南担仔麵) in Snake Alley (Huaxi Street) goes from local stand to becoming the creator of exceptional seafood flavors.

米其林國際總監Gwendal Poullenec表示,這次總共有127間餐廳收錄在小紅本之中,可以看出台灣有非常豐富的美食文化,由於台灣四面環海,有非常豐富的海鮮,且過去受到日本中國文化薰陶,有非常多料理是從歷史中傳承,因此在評選過程中覺得十分驚豔。

Gwendal Poullennec, international director of the Michelin Guides, said that the 127 restaurants covered by the red book tell of Taiwan rich food culture. “Since Taiwan is surrounded by the ocean, it is a paradise for seafood lovers. Also, you can discover the history while tasting local cuisines since Taiwan is deeply influenced by Japanese and Chinese culture,” said Poullennec.

Gwendal Poullenec表示,這些食材都只是餐飲業的一角,許多台灣廚師,閃耀他們的才華,前往不同國家吸取經驗,回到台灣,融入在地食材,加上國際上的技術,未來也預計可以看到越來越多的廚師大放異彩。

Asked about Taiwan ingredients used in the award-winning dishes, Poullennec remarked that local chefs utilize the craft they have learned abroad before they come back to devote to their extraordinary talents to the dining industry. It is because all the local talents that Taipei offers a one-of-a-kind food scene that attracts visitors from around the world every year.
