【看英文中國郵報學英文】知名連鎖餐飲「鼎泰豐」的小籠包名聞遐邇,店外總是大排長龍,更是許多外國遊客來台觀光,指名必品嚐的台灣名菜之一。不過,鼎泰豐除了小籠包之外,炒飯也深得網友喜愛。

Din Tai Fung, a well-known chain of restaurants, is famous for its long lines and delicious xiaolongbao. The restaurant is famous among foreign tourists. However, in addition to its best selling xiaolongbao, the restaurant’s savory fried rice has also won the attention of customers.

On a popular online chat room (PTT), a curious customer claimed that Ding Tai Fung’s fried rice does not contain soy sauce and pepper. It is thus prompting the question of how fried rice is made.   

原 PO 以「鼎泰豐炒飯到底怎麼炒的」為題,文中提到吃了鼎泰豐的蝦仁肉絲炒飯,直呼「媽呀!就一個炒飯而以,為啥那麼好吃?連我家巷口都被屌打」。

The curious customer’s post was originally titled “How Ding Tai Fung’s Fried Rice is Fried?” In the post, the customer claims, “Gosh! Just a bowl of fried rice, why is it so delicious? Even my front door is being ‘beat’.” 

貼文一出,隨即引發網友熱烈討論,紛紛回應「廚師分工細膩」、「商業機密不能說,但你可以加入鼎泰豐!」。

As soon as the post was uploaded online, a heated discussion among Taiwanese residents arose. Many people claimed that the deliciousness of Ding Tai Fung’s fried rice was from the “clear division of chefs” and that “secrets can’t be said, but you can apply for a job at Din Tai Fung to learn!” 

「蔥蛋米的比例剛剛好!自己炒多放料都不對」、「鼎泰豐厲害在品質穩定」。

Others commented, saying “the ratio of onion and egg rice is just right! It’s not good to fry more and more.” From this, other user added, “Ding Tai Fung is very stable in quality.” 

此外,一名內行網友出面解析有關鼎泰豐炒飯的內幕,指出鼎泰豐用的米是台梗 9 號。

As a result of the post, an insider from Ding Tai Fung revealed the inside story of Ding Tai Fung fried rice, pointing out that the rice used by Ding Tai Fung is No. 9 Taiwanese pedigree.

這種米有個最大的特性,就是即使放冷了也不失風味,很多日本料理店也愛用;醬油以前是用鬼女神醬油,近年疑似已更換,不過以前炒飯加醬油不用錢,現在需多收費。

The rice’s most significant characteristic is that, even if it is cold, it does not lose its savory flavor. The rice is also commonly used in Japanese restaurants. As for soy sauce, Ding Tai Fung used to use “Gold Goddessm” soy sauce; however, it has been suspected to have been replaced in recent years.

該網友接著指出,至於鼎泰豐每天那麼多炒飯,要讓每一盤不出包、味道一致,這也是他的強項。

The insider also mentioned that although he may serve numerous dishes of fried rice every day, he still uses all his power to make every serving delicious and equivalent to one another. 

肉絲是早上嘉一香現宰的新鮮電宰豬肉回來處理過的。

The insider also mentioned that every morning, the shredded pork used in fried rice is processed by an electric slaughter machine. 

中央工廠有個機器專門做炒飯用的鹽包,但每個師傅的手感不一,口味更有淡有鹹,難保每次下的鹽量一致。

Although the factories owned by Ding Tai Fung may have machines that control the salt content for each dish, the taste served from each plate is actually cultivated by a chef’s hands. Therefore, some dishes may be saltier than others, and it is difficult to guarantee the same amount of seasoning in every dish.

因此把每一份炒飯所需的進口海鹽和調味料 1.6 克裝成一包,店內廚師炒飯時輕輕一撕,就可以均勻灑在炒飯上,且蝦仁炒飯、肉絲炒飯等,用的鹽包都不同,文末強調「維持好材料,趁著新鮮處理,用標準化 SOP ,才是這家店厲害的地方」。

Currently, 1.6 grams of sea salt and seasoning is required in each serving of fried rice. Although each dish served at Ding Tai Fung is different, the quality of the materials used are still exceptional. “Maintaining good materials, fresh processing and using standard SOP is what makes Ding Tai Fung awesome,” the customer posted.
